A commercial convection oven is any type of food preparation equipment that utilizes the unique cooking properties of forced air to cook foods. Forced air, or simply fan-assisted cooking, moves hot air around a thermal or steam chamber in such a way as to ensure even temperatures are achieved throughout the oven cavity. This ensures consistent and timely heating of all cooked food. The most common type of forced air cooking is what we know as convection ovens, but in addition to this, there are also blast chillers, rotisserie ovens, and even industrial conveyor belt ovens used for the mass production of foods such as bread and pizza.
